
Look at all that marbling! Something known for the beef chuck is the fat content. Love it or hate it, this roast stands apart from others. The chuck is located near the neck and upper shoulder of the beef. This muscle is used quite a bit and contains some extra connective tissue as a result. Not to make it sound undesirable in the least. Just means this particular cut of meat needs time to break down into its most tender state. The chuck roast is the king of crock pot or “pot roasts”. Not so much the type of roast described as “roast beef.” It simply falls apart after long slow cooking and leaves behind a desirable amount of aju perfect for gravies.
Not familiar with preparing a chuck roast? No problem. Here is our family favorite recipe that is easier to prepare than spelling it.
Mississippi Pot Roast

Equipment needed: Slow cooker Servings: -4-5
Ingredients:
- 2-3lb chuck roast
- 1oz packet (or 2 Tablespoon homemade) ranch dry seasoning
- 1oz packet aju gravy or brown gravy
- 1/4 – 1/2 salted butter, cut into pats
- 6-10 pepperoncini’s and some of their juice (optional)
Directions:
- Place chuck roast in slow cooker and sprinkle ranch seasoning and gravy packet(s) over the top.
- Add pats of butter around the roast and also the peppers.
- Secure lid and set slow cooker to low for 8 hours.
- Once finished cooking, remove peppers and slice or chop before returning to slow cooker.
- Shred roast as needed.
Serve with mashed potatoes (don’t forget the self made gravy!) and a veggie for a delicious and complete meal. No time to prepare separate sides? Just cook them in the slow cooker alongside your roast. consider dinner done!
